Easy Vegan Dessert Recipes For Beginners


Nothing caps off a great day better than a  great dessert!  Why not make it even better by whipping up an easy vegan dessert!  I’ve put together a list of some easy vegan dessert recipes for beginners.

Some of my favorite dessert recipes are already vegan and gluten free.  I do have one recipe listed that I haven’t been able to perfect into a gluten free recipe, it is however, still vegan!  When this non gluten free cake is made you will find me sulking in the corner having a pity party for one.  HAHA But I will live. 

Easy Vegan Peach & Blueberry Cobbler

This recipe for beginners is one of my favorites. It comes together super quick and never disappoints!  There are a few ingredients that can be swapped or altered to your desired taste.  I have used a bunch of different fruits in this recipe.  Peach and nectarine as well as mixed berries which included raspberries, blackberries and blueberries.  Nectarine and blueberry would be tasty together so would cherries and nectarines or peaches or both!   Not to mention apples and pears as we approach fall.  The last time I made this recipe I did not have lemons but had oranges.  Either citrus components work great. I would go less orange zest/juice if you aren’t a big fan of the flavor. 

Easy Vegan Peach & Blueberry Cobbler Recipe

350 Degree Oven / 8×8 baking dish / 30 minutes baking time

  • 1C Quick Oats
  • ½ C Brown Sugar
  • ¼ tsp Salt
  • ½ tsp Cinnamon
  • 3-4 Tbsp Maple Syrup
  • 2 C Peaches – Fresh (about 3 large peaches)  or frozen – sliced
  • 2 C Blueberries – Fresh or Frozen 
  • 1-2 Tsp Orange zest – Lemon zest can be used too
  • ½ – 1 Tbsp Orange juice – Lemon juice can be used too

If you are using fresh peaches, remove the skin and cut into slices. 

Wash and pat dry fresh blueberries, if using. 

In an 8×8 baking pan add peaches and blueberries.  Stir to mix. Add zest and juice.  Stir to mix. In a separate bowl add oats, brown sugar, salt, and cinnamon. Stir to mix.  Add maple syrup and mix. Top fruit with oat mixture, making sure to cover all the fruit. Bake at 350 for 30 minutes. Enjoy!

Easy Vegan Banana Nice Cream

I used to make homemade vanilla ice, pre veganism. I don’t necessarily miss this dessert a whole lot but my kids sure do and I found the perfect dessert to help with their cold creamy ice cream fix, nice cream!  Nice cream is frozen bananas blended to smooth perfection.  This is a fun concept in my opinion because it can be really versatile. With frozen bananas as the base ingredients the additional flavors are endless.

We made classic banana nice cream for the kids and my husband and I had cherry banana nice cream. The nice cream was good, even better when I added dark chocolate chips 🙂  Bananas cut into slices before freezing are easier to work with. We usually freeze 1-2 bananas at a time.  I slice and place the pieces on a parchment lined baking sheet. Freeze the bananas in a single layer then place in a ziplock freezer bag.

Then they are ready for the next time you and your family want a frozen treat. I have seen stores sell frozen bananas in the frozen fruit section, so that’s an option too. 

Easy Vegan Banana Nice Cream Recipe

Blender

  • 2 C. frozen bananas  (about 2-3 frozen bananas )
  • ¼ C Plant Based Milk
  • Splash of vanilla – optional

Combine frozen bananas, milk and vanilla in a high speed blender.  Blend for 2 minutes. Enjoy right away for a nice cream soft serve consistency. 

Other Options for nice cream are:

  • Chocolate – add 2 Tbsp cocoa powder to the original nice cream recipe
  • Mango – add 1 C. Mango to the original nice cream recipe.  Odmit the vanilla
  • Peanut Butter – add ¼ C Peanut butter to the original nice cream recipe. Omit vanilla 
  • Cherry- add 1 C. frozen cherries to the original nice cream recipe. Omit vanilla

Feels like the possibilities are endless with nice cream! Have fun with it!!

Easy Vanilla Vegan Wacky Cake

This next recipe is a wonderfully delicious cake that is super simple and from what I’ve heard very tasty! Wacky cake or great depression cake is our go to vegan birthday cake for our son.

This recipe is easily doubled, made into cupcakes or mini cupcakes. It will make your kitchen smell heavenly while it cooks for 35 short minutes. It comes out perfect each and every time. Did I mention it’s one pan? A one pan cake. One.

Wacky cake was born while rationing items like milk, butter and eggs after WWII.  Wacky cake can be made as a chocolate cake, spice cake, pumpkin, funfetti, and lemon to name a few. With these minimal ingredients everything is working in harmony especially the AP flour, which may be why I can’t get a gluten free version to work out right. The recipe below is a classic vanilla wacky cake. I think you will really enjoy it!

Easy Vanilla Vegan Wacky Cake Recipe

350 degree oven / prepared 8×8 baking dish can be doubled and placed in 13×9 pan

  • 1 ½ c AP Flour
  • 1 C sugar
  • 1 tsp baking soda
  • ½ tsp Salt
  • 1 tsp vinegar
  • 2 tsp vanilla
  • 5 Tbsp vegetable oil
  • 1 C Water

In your prepared 8×8 pan add flour, suga, baking soda, and salt.  Stir to mix.  Make three wells. Add vinegar to one well, vanilla to the second, and oil to the third.  Pour water over everything.  Mix well. Bake in a 350 degree oven for 35 minutes. Top with favorite frosting or fruit or whip cream!  This is our son’s planet themed birthday cake from last year 🙂

To double the recipe , simply double all ingredients.  Add to a 13×9 baking dish and cook for 35 minutes and 350 degrees.

Bonus Easy Vegan Dessert

I love dates. The fruit? Are they a fruit? Yep quick google search they are in fact a tropical stone fruit. Medjool dates are my favorite, although there are a large variety of dates. They have a pit inside so be careful. As sweets after dinner go, these do the trick for me. I love them. They are chewy and have almost a caramel flavor to them. Yummy!  Dates are delicious on their own, but I have kicked it up a notch by slicing them, removing the seed and adding a dollop of nut free peanut butter. In this house that means wow butter. I will say, very savory.
